There are several reasons:
First, and foremost, in the United States they were never popular and full stocks were associated with military rifles. In the era when tastes regarding civilian bolt gun aesthetics were being formed, a man who hunted with a mil-surp was seen as being poor or cheap, hence why so many milsurps were sporterized. Note, the full stock was almost always cut down.
Further, full stocks, for hunting rifles, where protecting against heat from prolonged firing is not a concern, originated as a way to allow the gun to be used as a walking stick (grasp near muzzle, strike butt against ground). Even modern optics wouldn't like that kind of battering and early optics were definitely not capable of enduring it. This is in part why mannlicher stocked rifles were and are almost always fitted with iron sights

Good bedding because they were made well and take one to the jungle, let it warp and see what groups it shoots. A floated barrel and compound bedded action will do better in a wooden stock, better still in a man-made, but a chassis that's very well made and then skim bedded is probably the best of all. Manlicher stocks and other full length types are at the very bottom of the pile.

If you take a K31, grind away the stock at the muzzle to turn it having a free floated barrel that same K31 that shot 1MOA will now shoot 5MOA.
Guns that are designed with free floated barrels in mind have thicker barrels and are often shorter. This is why every bubba'd milsurp shoots like shit.

There are many roads to Rome. I'll choose a heavier, thicker barrel that is rigidly mounted over some weird ass flute that breaks when you drop it.
Both have their merits, but my grip can be shit due to nerve damage so i'll go with the gun that can handle a bump.
