Don't laugh, but I always wanted an Akula submarine as a SHTF escape.
I admit, no idea what I'd do with the ICBM tubes since I don't see myself planning to nuke people in a SHTF scenario. Maybe conventional explosives though. Or some kind of overly elaborate launch system for vehicles and supplies for shore teams.
But I know, in a fit of nepotism, I'd have to invite all my friends and family to live aboard after painting the thing Yellow. Also get another smaller sub to 'live next door'.
