Actual answer though: Because Assad would get btfo. After Israel assassinated something like 14 IRGC commanders, Iran decided to retaliate by firing 14 grad rockets at Golan Heights. They hit open areas, but triggered Israeli air strikes that hit 40+ more Iranian sites in Syria. Iran didn't retaliate again after that.
Also, Syria is 100% dependent on Russian aid and basically just takes orders from Moscow. Putin has an agreement with Israel to let them bomb Syria when they want provided it doesn't interfere with Russian forces there. Thus Assad actually can't retaliate even if he wanted to.

Israel has multiple things going for them, outside of whether or not the Russian tech is effective.
1. Constrained Geography
Syria is only defending a limited area with these units, a thin strip that borders the sea, and the Greater Damascus Metropolis. There are also a limited number of spots where the SAMs would be worth having, so finding them isn't hard which flows into
2. Time
Israel is whacking these systems at their leisure, and only after they have exhaustively prepared and analyzed the situation and triple confirmed everything. They can, and thus are, taking as much time as they need to locate, verify, and properly plan out these attacks, and they have to capability of pin point overmatch.
3. The SAM network is neither mobile, dense, or complete, and is not manned nor operated in a manner that is according to doctrine
Its a half-quarter assed SAM network, a consequence of Russia no longer being a super power, and Syria being a burnt out ruin more thoroughly destroyed than Poland and Germany was in 1945. And the SAA wasn't particular good at manning their SAMs to begin with, they typicaly just parked them and left them, and never bothered with things like 'decoys'. And when they did bring them forward, it was into an even SMALLER area geographically than Syria itself, meaning the area needing searched was even smaller
Currently the SAA AAA training capability is nothing.
Israel destroying these is indicative of nothing more than that Israel has functioning jets and weapons. Russia would have to deploy an Army Group worth of AAA systems alongside a hundred or so of their fighters, stationed in the country permanently alongside a division's worth of long range rocket artillery
And if this was the 1980s, they could negotiate with Iraq and Iran for flightspace, and put Israeli Air Fields under cruise missile threat. But it isn't, and the Caucuses would play cockblocker.
Actually thinking about it, it would have been fucking amazing had the USSR parked a fuckload of SCUDs in Syria to support the Syrian intervention in Lebanon, and then made the sky darken with the mother of all long range rocket bombardment.

Would have been a disastrous decision on their part, which is why they didn't do it. They did however emergency airlift weapons and buckets of cash to damascus to help it rebuild after the Israeli's blew them away again though
1980s IDF was hardcore. The Soviets were wary of it and had gotten their noses bloodied by them before. It would have been a major military effort to go to war with them, which given their ongoing campaign in Afghanistan made it a suicidal idea. Not to mention the US response.

It's a stupid game of cat and mouse: Iran smuggles weapons to its proxy, Hezbollah, via Syria (which agrees to this because greatest allies), and Israel bombs them once they pass a certain threshold/red line. Syria/Iran/Hezbollah accept they've been caught, usually save face by either Israel addimiting nothing (relieving Syria from someone to target) or by claiming ridiculous stuff such as intercepting all missiles and air aircraft, and just try again some time later.
