1st one the knife guy is moving in slow-mo, the second one the shooter wouldn't stop the attackers momentum and would 100% be better off running rather than getting stabbed in the back for a small chance on landing a single gut shot. And all this is even more retarded due to the fact that shooter is ready and waiting to draw and wouldn't have that reaction time IRL if the stabber rushed him from that distance.

Serious answer. You have 3 options and it depends how close the attacker is
1) draw if he's far enough away. Hopefully you can see somebody walking over with a freaking sword
2) make space and draw. Run like a bitch and use obstacles between you and the attacker. Draw when you have the opportunity.
3) close in, control the weapon, grapple. Try to pin the weapon and draw or break contact then draw
Active Self Protection has a lot of knife and a few sword (machete) attack videos. Usually the swords are big and obvious, you'll probably be able to see it ahead of time. The knife attacks are shorter distance and concealed. Also check out any sparring instructed by Craig Douglas, he does a lot of knife/gun training.

If you're using a gun, treat it like a knife with ayoob's 21 foot rule. he'll close distance about 2 feet faster than a knife attacker, so 23 feet.
If you're using a sword yourself, look into HEMA. MS I.33's plays from first ward are all pretty much defense from the draw with an arming sword and buckler.
