I dont wear safety toe so I could get by with lems boulder boots or something nice and thin. Since you need all the safety stuff you might have to get something unideal. In your case as long as it has a wide toe box and preferably zero drop (heel and toes same height) that's probably the best you'll get. I havent owned any of these Japanese style safety boots but they look relatively flat and minimal, I have also heard keens boots are wide.
Unfortunately safety boots dont have a lot of options for healthy minimal shoes
You're right, it's becoming increasingly difficult to find them in my size and that are comfy and lightweight. Perhaps I should start my own boot company.

I definitely recommend them if you need safety shoes. Models like the one I posted above are light, breathing and bend well. Been wearing them for a whole year now and it's like fucking sandals compared to ordinary leatherette safety shoes.

Any random 50 dollar boot from walmart will beat the shit out of a cheap milsurp boot in comfort. Yes it will fall apart and you have to buy a new one sooner but 1 year of comfy shoe beats 5 years of misery.

I wore Danner boots through two deployments (one pair each deployment) and they held up just fine (although they look beat to shit). My Bates didn't even survive pre-deployment training. Since I got out, I've only bought Danner and, unless something drastic changes, will be a lifelong customer.

I'm wearing these Eccos right now, they've been my go-tos for a few years. They're pretty nice but now that I'm doing more outdoor work and getting my fab shop set up after a move I need something more serious.
I just ordered a pair of Nick's after hearing a buddy of mine talk them up, so we'll see how that goes. Fuckers weren't cheap so they had better be good. So, in 10-14 weeks I should be able to give you guys an update!
some people like the extra heel for line work. but the dudes i know that are linemen don't recommend them due to a lot of them not having electrical protection. i guess it's shooters preference really.

For what purpose? I don't typically shill for Justin's, most of their stuff isn't great, but I bought a pair of these Justin Stampede's and I get quite a few compliments on them, and after they broke in they are quite comfortable. The waterproofing has worked great so far, and that's dealing with oil based mud and all kinds of God awful shit that's soaked them in the oil business or out shooting shotguns in the field. They weren't my first choice but they were in the price range my company would comp for work boots and they've worked out nicely.

Still wear my garmont T8's when hiking. Had them since end of 2014, will need to resole them. Super comfy boots, great ankle support. Got them when I was still in the army.
Ive worn danner steel toe boots for work, unfortunately the gore tex failed on both inside of 6 months, not going to buy a third set. Sno-sealed them both when new, clean and reapplied every other month, still didnt hold up. Spilled hcl acid (diluted) left the leather looking really weird, but intact on the first pair, so I figured a second set would last longer. Nope.
For kicking around I love my Solomon boots. They also make a really good all weather running shoe, nice, super aggressive outsole.
The old model with the uncushioned, welted sole is excellent. Everything since ages quickly, the newer the quicker.
