Invite him to the range and let him shoot your guns. Teach him about gun safety to prove to him you're not a cowboy he needs to be worried about. Most antigun folk realize guns aren't that bad when they have actually shot one. He may be to proud to admit he was wrong and become progun, but he might also relent and let you have your guns in his house, which is the real goal here isn't it? Also it's a good way to spend time with your Dad and stuff.

The most reasonable answer. My dad was never a gun guy, but every time I shoot, i ask if he wants to try. He liked my handnugget and CZ .22 slide, but he's declined offers to try anything larger. It's made him okay with me owning guns and he's happy to help with projects (got me the barrel vise and tool for my FAL as a birthday present)

A. tell him that while you respect his views, there aren't many safe alternatives to firearm storage and you think it would be safest to keep them in his home (you will end up buying a safe, or at minimum trigger locks for this to work)
B. suck it up and have a buddy keep your guns (or sell him the collection for $1 so if they did get stolen it isn't a nightmare legally)
C. lie to his face and hide them in the house
D. don't live there
