Peanut butter is dense. Use carrots for carbs and celery if you don't need them. The vegetable sticks will give you micronutrients.
You can go full on and have peanut butter with malt loaf, throw in some crushed fresh dates as well, but there's a point where it stops being something you can pick up and eat in the go to something you stop and make and have to eat before you go, thus, not quick.

Chicken/beef broth with lots of veggies, potatoes, etc. You put it all in one pot and boil. Check on it every few minutes until it's done.
In Mexico we have Bistec Ranchero, basically cut steak into short little strips, cook with tomatoes, potatoes, bell pepper, squash, onions, carrots, corn. Every family does it differently but that's what I use. I serve it with white rice and beans on the side, it's fucking great.
Stan Efferding promotes this thing called Monster Mash, kinda like a simpler version of Bistec Ranchero IMO. It's basically ground meat, rice, and chicken stock served all in one mush. I would go for Bistec, though cause I like veggies.
