I can leg press roughly 225 lbs.

I can crunch 200 lbs with my abdominal muscles.

My body-mass is 290 lbs, and I'm 6'5. In terms of body structure, I'm 79% lean mass and 21% fatty tissue.

After my workout sessions, I'm sore for 2-3 days—despite getting a fare amount of sleep, which is 6-8 hours.

Not exactly strong m80. You're problem is most likely from using machines too much. Do free weights and you might find your tendons improve.
