Today I was at the supermarket with my gf. I was waiting for her to pay (we went through different tills) when a guy came out without paying. He had a hoodie on and his hands on his pockets. As he passed through the tills one of the cashiers, a middle aged woman, yelled at him to stop because she'd seen him stealing something. He just continued walking. It was at this point that he passed right through me. The middle aged cashier and another younger woman who works there then ran towards the guy and grabbed his arms, telling him to stop, but he easily broke loose and ran away.A guy who was standing in the queue went out and ran after the guy, but never caught him.
What would you have done in this situation? I'm a skelly and can't really fight. Plus I have no idea how far the dude was willing to go, but I still feel like I should have tackled him. But then what? Do I attempt to choke the guy until police comes?

I would do nothing. It is all insured anyway and if it turns out the guy had not actually stolen anything (say the middle aged woman made a mistake) then you would have illegally assaulted an innocent person.
