I have two main theories on this:
1) The kind of physique that you get from a naturally active lifestyle is more proportional than what you can achieve in the gym. Of course, if you REALLY know how much to work each muscle group, the difference is minor, however, many gym-goers lack understanding for that and just want to "get big". Even if just a bit is off, it starts to look slightly off. The counterpart for this is the classical "stick with ridiculously big butt" in girls.
2) It's also a lifestyle thing. If someone has to go to the gym to maintain their shape, that means that they do not have an active and "exciting" enough lifestyle outside of that and it might be overwhelming for a girl who has no experience in fitness. On the other hand, for a fit girl, it can be a little overwhelming to have a boyfriend who's hardcore into the same thing. I personally usually go to the gym to think and study(you can remember facts really well when learning them between lifting) and want to do other things like hiking, swimming or running with my boyfriend where he needs to be able to keep up with me.

There are many different powerful factors in attraction. Height contributes to the dominance factor, which is big, and provokes a very primal reaction in a girl. There are a lot of girls who insist on having that (or rather only respond to that because they're trashier), or they (quite rightly imo) just want someone of equal relative stature. This is fine, I would have to be very very special in other department to end up with a glamour model.
