Hill sprints of slight grade are good especially for untrained sprinters because the hill reduces the stride length of an athlete. This prevents athletes from over striding and placing too much load on the hamstrings due to poor sprint mechanics. Additionally, an athlete on a hill takes longer to accelerate to max speed than one on flat ground, which teaches the drive phase of the sprint to untrained athletes. It is important to pick a hill that does not interfere with proper sprint mechanics however. Running up a steep hill is very different than actually sprinting up a slight grade. Climbing a hill as fast as you can provides nowhere near the training stimulus as a properly performed sprint up a graded surface. Also most people cannot properly sprint in the technical sense for more than ~50m or so before they are no longer sprinting but jogging while swimming in a lactic bath. If you are new to sprints try to pick a distance of 10-30m depending on what feels like you can maintain full max force output over.

Sprinting down a very slight grade falls under the category of so called overspeed techniques. In very advanced athletes these techniques actually produce a very large training carryover in some athletes. However downhill sprints are very taxing on the hamstrings due to the increased stride length and the increased leg speed achieved by going downhill at max speed. Generally these techniques will be a guaranteed hamstring pull or tear for athletes with little formal sprint training. The requirements for the hill grade are the same for uphill sprints, if the grade causes breakdown of sprint technique the athlete will not be capable of a maximum output and will then definitionaly no longer be sprinting and instead be doing something more akin to falling down hill quickly. Anyway I wouldn't recommend overspeed stuff unless you want to feel what a hamstring tear feels like.
