quick tech tip, just erasing files still leaves them recoverable. If you really want to get rid of them you should do a 0 overwrite on the drive.
Encrypting the drive / folder with high enough encryption should be fine, make sure you store the key somewhere safe. If you are really paranoid about it, store the key inside another encrypted drive, and the key for the second drive in the first. Kinda overkill but I got really paranoid a while back and went a little crazy
