I eat 3k everyday, it's not even hard. Get some peanut butter. High calories, high protein, good fats. You can easily get 600 kcal in a sandwich, i've even made some with over 1k.

lunch: french bread, pesto, tomatoes, mozzarella cheese in a sandwich. chips with hummus, orange juice
dinner: 10 pork potstickers and a 500 calorie shake.
dessert: 300 calories of whatever you like.

thats what i ate yesterday to get to about 2800 calories. get food you like.
