In Poland we have a family gathering we give each other wishes while sharing wafers with ourselves. We celebrate the Christmas Eve more than Christmas day, there's traditions of 12 dishes but I don't know how many people still practice it, we used to not eat meat on Christmas Eve. The most traditional dish is carp. Gifts are given after singing carols, there is a tradition where the Christmas Eve supper starts when you can see the first star on the sky but I don't think anyone still practices it. Some religious people go to church for the special mass called "pasterka" that is on the night of 24-25th. Before starting the supper a part of the Bible is read. Don't know how many of these are specific to Poland but that's how Christmas usually goes here.

worst part for me is wishes because you're supposed to tell each and every single person wishes individually so simple "merry Christmas" won't do and some of the people I see only once a year on xmas so I don't know what to say

I don't know the origin of boxing day, but basically it's like a mini black Friday. Most stores have big sales that week or "boxing week" as it's known
