Well Idk for iphones or whatever you use but on Android at least there are apps to do it, or you could put a dot next to the folder (like ".folder") to make it a hidden folder and can only be viewed when you have hidden folders enabled

The problem is that they’re synced from my computer, and the phone doesn’t let you change them at all if that’s the case. So my deletion of them won’t even be until I reinstall iTunes

You could move them to a google drive and have them synced from there. and you can just log out from time to time.
