I have never even had alcohol before let alone making my own

when making gallon batches i always use 3 cups of honey

it’s fun and easy. mead is basically water, honey, and yeast. plus two weeks ferment time minimum

yeah i wouldn’t suggest making pruno. it uses baking yeasts which aren’t cultivated to take into account methanol production

only after letting my yeast sit in some lukewarm water for a few minutes do i add it to the mix. here’s my favorite yeast to use for mead (can give you around 18% abv)

i’m using an airlock, but you could just put a balloon over the mouth and poke 4-5 holes in it

i’ve also wanted to try an experiment with an old batch of wine i made;
since ethanol freezes as lower temps than water, i plan to freeze this batch and use gravity to separate the alcohol and syrups from the water in it and see if it will fortify my wine
if this works, i want to try it on my mead too
need some vices or my life would be boring

it works, they have done that (freeze distillation) for hundreds of years. doesnt get you 160 proof stuff but it can raise the percentage to more than 30 if you rewlly freeze it a few times. Applejack is a drink made pf freeze distilled hard cider

oh hell yeah. would you know if multiple freezes would take away the syrups? i mostly just want to concentrate the flavors and get to around the consistency of port wine

no the only thing that freezes is the water. you will lose a small amount of syrup because when you drain the alcohol some of it stays trapped in the ice because it flows a lot slower but it doesnt make much of a difference. you can definitely get to port wine alcohol levels with freezing it, and because there is so much less water the flavor will be really concentrated too

i try to avoid gluten in my brews because it makes me bloat. it sucks though because i love scotch

I honestly want to try this. Should you let the mead age or drink it immediately?

mead always gets better with age, but with lower abv there’s still enough sugars in it for it to be good to drink immediately after ferment. you will have to filter some sediment as well so you don’t get any of the dead yeast that will gather on the bottom over time
