Just eat a reasonable amount of calories. You can use an app like myfitnesspal if you want to count them to the last slice of cheese.
Try to hit a decent balance between macros. But honestly, especially if you're a newbie, it doesn't really matter that much. Just try to eat "real" food, and don't drink your calories.

OMAD at a slight deficit if you want to lose weight. What exactly you eat is largely up to you and it's more a matter of health than weightloss. Generally you want good quality animal foods (fish a best, eggs and organ meats, then meat, then fermented dairy), veggies preferably with every meal, some fruit but in high moderation

We used to not eat that much meat. Also, the animals we consume today are pumped full of hormones and are just as genetically modified as wheat.
Literally the chickens we eat couldn't even survive in the wild as they grow too fast. The cows are genetically modified to produce too much milk. They are fed grain instead of grass.

We need to know your BMI, so calculate that and then make a decision. The reason it seems so confusing is that some of these diets are designed for specific goals in mind and other diets aren't for fitness reasons.
If you're overweight or obese based on your BMI, then keto and low carb is the way to go.
If you're underweight and skinny, don't do keto or low carb won't do fuck all for anything you're trying to accomplish.

I've read "The Paleo Solution" and thought it would make a great general guideline for a diet if the author would relax on the legumes/other stuff being evil sort of things. You can 100% eat all food the comes from nature.
I'm recomping, I eat 1g of protein per pound of bodyweight and I weigh 140 (inb4 manlet) but I have a pretty high TDEE for my weight
