Use the weight you want to be in the weight field, also bump up your activity level since you should be doing a gaining routine. Just a guess but I'd assume it would put you closer to 3k a day.

- Grains absorb water after cooked. So if you see that "raw rice has n calories per 100g" it will mean that you will have to put about 300g of cooked rice (or something like that) in your plate to eat n calories. Beans usually quadruple in size.

Meats do the opossite. Raw meat has water, cooked meat has less water.
