Raise animals, drinking their milk while they live, applying their waste as a product.
Grow crops in larger amount, selecting not for calorie density but for nutritional supply, applying "crop rotation" or other outside soil supplementation to keep up the supply of this healthier crop(s).

But nah, too many cultures in the past got their hands on something that grew all the time at basically no effort and had tons of calories, so they just grew that. Now they can have families and clans and nations 5x bigger than last generation! DONE!

Very true, and remains true for fish as well. Animal marrow may have a mild bit more, but unless the bone itself is crushed and eaten (not generally done), calcium continues to be in rare supply. So, take advantage of animals' dairy.
