My eyes have always been really sun sensitive, on a nice day I often can't look up further than straight ahead without becoming Chinese. I try to get as much sun as I have time for but I take 50micrograms of D3 every night to make sure.

This is it. You should never seek the sun if you want to preserve your skin. Importantly, tanning itself makes it harder to synthesize vitamin D, and an absurd portion of people who are outside frequently in sunny areas still are insufficient in vitamin D. You simply can't rely on sun exposure to generate vitamin D and as sun exposure itself ages the skin it really needs to be avoided.

Yeah except that's dumb. The RDA is woefully low for maintaining optimal vitamin D levels. 400IU, 800 IU is really not enough for most people. A supplement of 3k, 5k, 10k+ IU over several weeks to months is going to be needed to move up and maintain levels.
How do you know the daily dosage of vitamin d supplements you should take?
depends what your baseline is, if you're already low then take 5-10k IU for a few months, if you just want to maintain then 1-3k is fine, under 500 are meme dosages, >40k IU are entering toxicity levels but you should never have to get anywhere close to that

2. Take some amount of vitamin D if needed for two months or so.
3. Get tested
4. Adjust accordingly
There's a huge amount of individual variation in vitamin D metabolism so the amount that works best for you is going to vary. 5k-10k is a good amount to take to build up levels. You could probably do 20k if you wanted to and just test more aggressively.
Personally I need 5k a day to maintain 50ng/ml, but I'm sure 1k-3k will be fine for some
