You can use pretty much any distro you want, as long as it doesn't automatically come with a desktoo environment. Just install any window manager you want (I use i3) and you're good.

What you're referring to as Linux, is in fact, GNU/Linux, or as I've recently taken to calling it, GNU plus Linux.
