overtraining doesnt really exist but most people do far too much volume and theyre basically spinning their wheels more than they can recover. Then they dont turn into arnold in a month despite doing 150 sets a week and disappear. The body adapts to situations, not exposures. You should do a routine that you can keep up with long term and has higher frequency per muscle group with lower volume

When you wake up sore and fatigued. It’s your body telling you to take that day off. Always listen to your body.

Overtraining is in large part a meme. It's a real thing but its been twisted so much by stupid bro-scientists. You'll know you've overtrained when you're struggling to complete your regular routine, feel super tired/sluggish, and dont have the strength you usually have. Personally I would just try to push through your workout if this happens to you, you might feel better the next day. If it persists you could take a day off OR just deload and lift a bit lighter.

Usually if I can't recover within a reasonable time frame for my next workout. If I can't squat for 4 days after a good leg workout, I think I wen't too hard.

Sure my muscles are rebuilding during those 4 days. But I could have done that process twice over instead of once. Otherwise I think you'll generally know if you've trained too hard and it's somewhat difficult to achieve so you shouldn't be too worried.

It's not about reps, it's about sets per week.
Try a dozen for benches and squats (counting all variations you use), half that for ohp, like 14-15 for deads+other posterior chain intensive stuff, squats don't count, and 14-15 back stuff like chin ups or rows.
Since you asked, most sets should stay in the 6-10 reps zone, BUT a few sets (like 2-3 for bench) should be in the 3-5 and a few in the 12-15.

There's a couple biometrics for telling if you're overtrained. Generally if you are over-trained your grip strength will be noticeably weaker than normal, and your heart rate will be higher than normal when you wake up.

You'll get better at knowing how much you can handle and whether you should take a day off to do nothing or just some cardio.

You start losing strength instead of gaining it. I've noticed it mostly with my grip and forearms sores. Also instead of doing more reps on some machine, you end up doing less even with lower weight. There are other symptoms outside gym too. It's not all about calories.

I fucked my legs up by overtraining. This was from before I went to the gym but did a lot of running, athletics and football. My legs (most specifically quads) became permanently exhausted, I couldn't jog 10m without them feeling completely drained despitr previously being very fit. At its worst I would get up in the morning and just fall to the floor as my legs wouldn't hold me up. Took about 5 years for them to get back to normal, though it does sometimes crop back up a bit.
