Make smoothies with unflavored whey, peanut butter powder, honey, oats, etc. Whatever you can come up with would beat the shit out of a gainer in terms of taste and nutritional quality.

That being said a slice of cheese pizza at Costco is like 700 kcal with 44g of protein. The chicken bake is about 80kcal with 60g of protein. Both are super cheap.
Just swing by and grab one or both along with your daily meals and that should help. Also check out GOMAD if you haven't already. I'm thinking about starting that again myself.

In terms of weight, personally started gaining weight as soon as I started eating consistently. Before, I was missing calories by skipping meals. Does not mean all skeletors are like that but the word is, most are.
