I'm not going to eat it, but I spent the evening making this. A friend of mine's boyfriend just broke up with her, and now she's going to her uncles memorial service alone today. She's in a bad spot and when she's stressed she doesnt eat. So this mac and cheese is comfort food for her. She's not the type to eat veggies, so I'm not going to tell her about all of the cauliflower I added to the sauce.
My week's meal prep is rice, broccoli and chicken for 4 meals and rice, broccoli and tofu for 4. Then im doing 4 jars of banana, oats and chia seed.
How much rice is too much rice in one meal? I tend to overfill my bowl by a little after a workout after becoming absolutely voracious. Somehow found pic related which is exactly the bowls I use
I think about half a cup is good. For me thats about a 3rd of the calories I need for a meal. I've found that if I dont actually measure it with a measuring cup I over eat.

Honestly? Because its good for her. If this is all she eats for the next few days I want it to be healthy-ish.
The kids cant tell when I make it for them anyways. I'm pretty sure she wont because its covered in cheese, and they never notice the cauliflower in the sauce. Food processors are magic.

Good point. I've gained a bit more stomach fat in the past few months after putting rice back on my plate. Was concerned my body was using protein as a primary energy source because I skimped out on carbs for half the year
I haven't had a problem with them at all. I only added them for the extra 150 calories

Oats a god-tier carb. I shop at costco almost exclusively, so I like to buy and cook in bulk. I don't know where you're shopping but here's my typical day.
>Green Juice (spinach, orange juice, lemon juice, and water blended together)
>Apple, peanut butter, multivitamin, vitamin D3
>Canned Chicken Breast (I just eat it right out of the can with a little bit of spice, super quick and cheap)
>Overnight Oats (rolled oats, chia seeds, whey, and milk soaked together overnight)
>Beef Chili (ground beef, beans, onions, spices, tomatoes, all cooked in a slow cooker)
>Gumbo (Chicken thigh, lean sausage, trinity vegetables, spices, flour. I oven bake my flour to make a roux instead of cooking in tons of oil, makes my gumbo super lean and still tasty)
The last two I make a week or two worth and freeze them, still good after microwaving.

Potatoes are like 30 calories per 100g with 16g of carbs whilsts pasta is 370 calories per 100g with 75g of carbs. Even if I eat a fuck ton of potatoes, I can't really eat more than 400 or 500g raw vs 200g of rice or pasta. Tatties are GOAT cutting food. Filling, slow digesting, oddly low in calories. Pair that shit with swedish turnips and you're golden
Different guy but they expand x10 in your stomach, so they end up making you feel full af. I use them in my morning oats sometimes but then I end up feeling full for the whole day. Great if youre on a cut.

When I make it for myself I do the following alterations:
Sauce:
- Add in mustard powder and a dash of onions sauce for taste.
- Suttee until tender cauliflower, a half a shallot and some carrots (or microwave them if you need to go fast) then puree them in a blender. you an honestly add any vegetables that are easily puree-able. The world is your oyster.
I drain them of their water and use a bit of milk for the puree. Its less healthy but tastes better. Then add that when you make the cheese sauce, just use less butter.
- If you use a sharp cheese you can get away with using less of it.
Add:
- I like to add broccoli to the dish. Make sure to microwave it first unless you like your veg more crunchy. Doing this lets you cut down on the volume of pasta your eating
- For protein you can add any meat you have, just cook it first. I prefer lean ground turkey, but I've done it with TVP as well (pic for reference). If you want a low calorie option dice up some artificial crab sticks and add those uncooked.
I'd stay away from steak or any harder meats in general because it messes with the mouth feel and kids prefer their mac and cheese sloppy.
Crust:
- The above recipe calls for adding butter to the bread crumbs, but I've always found that excessive. If anything just add a beaten egg and a bit of milk to the crumbs.
- Garnish with cheese, because it tastes good. I prefer the cheddar you use to make the sauce to cut down the costs of buying multiple cheeses.
Serving:
- I like to serve with a bit of kimchi on top because of gut health and it looks pretty.
