Partly because physical fitness is an activity one has to participate in, and do so consistently, intelligently, and over a long period of time to get any good/see any meaningful results. But a deadlift with proper form is not any more risky than any other lift. It's also the easiest lift to do with proper form, much easier than a squat definitely.

I hate squats and I only do them because everyone says they are essential. They are the most energy draining, difficult to progress on lift. I have never managed to progress over 2 plate squat in over a year because my legs are too long and just too weak.
If you want bigger and stronger legs you can just do any leg exercise and progressively load them over time. No one exercise is "essential". Replace squats with leg press and weighted back extensions, boom, quad and posterior chain workout with less fatigue.
