my mother bought this book a few years ago and for about 6 months all we ate was lettuce and kale. all of us had serious digestive issues after the first week (discolored feces, diarrhea) and dreaded dinner every night. eventually my father and I got tired of dealing with it and told her to stop. when she went back to normal food (my mother makes most things from scratch and has very good food) all the digestive issues went away. conclusion: that book should be burned.

the issues were due to the rapid change in your nutrition (different foods need different gut flora), they would have arisen if you had been eating this way all your life and switched to your "normal" food, too...it takes a while for a body to adapt
