I'm into eating, and especially drinking. I am also interested in doing more cultural things in the daytime.
As far as nightlife goes, I like both grungy dive bars and clubs that are not too pretentious. Germany seems to have the best nightlife out of the three.
I am flying out of New York, for what it's worth. The flights to both of the Scandinavian countries are considerably cheaper for some reason.

Go to Germany if that is what you are into. If the flights are cheaper to Scandinavia, consider flying to Copenhagen and take the train with DSB and Deutsche Bahn to Hamburg or Berlin. You can also use Flixbus which is very cheap.

Currywurst and schnitzel are basics for everyone. German women will not like you if you do not speak German. That applies to pretty much every European country unless you have luck hitting someone up on Tinder

I don't drink much beer, but I would recommend you try a Kellerbier. Foodwise we have a lot of variety. Traditional german food varies greatly based on location. Also there's a lot of Turkish and Italian food because of immigration.

Unfortunately I do not speak German. I guess I'm stuck with UK and Ireland as far as that goes.

Well Swedish people tend to be so fluent in English that it's almost silly for me to try to use 5 words of Swedish with people.
But Germany's command on Engish doesn't seem to be as good, and definitely not France. I met a woman from there who was only 33 and her English was super broken. Which there's nothing wrong with, of course.

There's not a lot of Spanish here. But if you can pick up some Turkish, that might help too.

I think if you like cultural things you should go to Stockholm because it's super easy to find where the cultural things are. There's a separate island which we call gamla stan that is the old city with palaces, medieval buildings, very old churches etc. With Germany it really depends on what city you go to, some are decent but some cities that rebuilt after ww2 like Frankfurt looks like a souless shell now. I have to admit that Sweden is expensive when it comes to alcohol, but there are some super cool bars like icebar which you will not forget due to their unique theme
