I don't it's that weird. People are very different and will react differently to your actions. While you may crack all kinds of dark jokes and be very funny and loud with a good friend, with your mother you'll likely be a bit more obedient, quiet, and compliant, just to illustrate an example.

Oh, my bad, I missed the gender part. Might be all kinds of reasons, for example, some people barely interact with the opposite gender at all during their childhood, this will likely result in them being far more careful when speaking with the opposite gender, as they're not able to really grasp them properly yet. Some people just feel intimidated by the opposite gender, others change their attitude in an attempt to get this person as their partner I'd imagine.

If you want an actual answer, its because men and women are different. Any woman that I associate with will get offended if I treat her like the men I associate with. There are subjects that you can talk about fine with men that will upset almost all women. There are ways of speaking that will offend women but will not affect men. In addition to all of that, men instinctively see women as possible relationships regardless of either persons current relationship status and I am told many women think this way as well. Relationship status plays into it as well. If I am single, there are a lot of things I can talk about with women that I cannot talk about if I am in a relationship. TLDR men and women are different so it is usually optimal to treat them differently.
