each game (except for the sequal games ofc) is a one-off story, so you could honestly start with any game. xiv is an mmo, so if that's your thing, then i think you should go for it.
i'm part of the people who did enjoy xv, but i understand how deeply flawed the story and gameplay were (it was developed during the merge of square soft and enix, and lost key developers in the process while having like 40 writers as opposed to most of the other final fantasy games having a small team of writers, so keep that in mind. the direction is obviously very "everywhere.") if you can't stand turn-based gameplay, most of the series won't be for you, and i'd suggest playing xv and waiting for the vii remake since xv doesn't have turn based combat and nuvii will use it minimally/tactically.
i don't recommend xiii, the entire game is borderline unplayable because of the flawed combat and point system. the story is very muddied and confusing (except for the last game in the series which delivers a satisfying ending), and vanille should have been the protagonist instead of lightning imo.
i got into the ff series playing x, so i would always recommend it. it's whimsical, the combat system is not completely broken or annoying (especially to those who aren't used to turn-based gameplay, but take that with a grain of salt because the final fantasy series is known for a pretty average turn-based experience as opposed to other jrpgs), really endearing characters, and an amazing ost.
normie choice would be vii or ix, which are actually both great games despite being very popular. i-vi are good if you like more classic fantasy rpgs! vi is widely regarded as being the best of the final fantasy franchise by diehards.
