Their family. All of them did it for the family. Some had had debts with mafia, and got themselves and their family death treats. Some were subhuman people with lot of children with no perspective for a future, living in a dump, etc.
Most wouldn't even write their name properly, never had a bank account and checkbook, so it was really difficult to be an informant of anything.
My boss used to visit some really poor areas and in those areas some time or another he would bring this "job" up for a person that would fit for the it. The details were explained in another occasion tho. No one ever called the police, maybe because my boss was a very respected man

yeah all movies followed basically the same steps. Two cameras, one stationary and me walking around the chair the person was tied up and zooming in and out, etc. They all started with a fingernail being pulled and ended up with a slit in the throat. No special requests, all I knew was that the audience loved blood... lots of blood. So I zoomed in where the person was bleeding the most, a couple of times.

Not OP but that depends on how long the heart keeps beating so it would obviously vary. Also, it'd coagulate if a slow bleed of an immobile person so it'd pile up like candle wax so it ends up being like ten feet tops on tile. As in diameter. There's lots of blood in the body, sure, but it won't likely be all coming out nor fast enough to spread far. Lots would be in the clothes, if not tile it'd sink directly into the ground alot, if you see.
