you lose weight by taking in less calories than you consume (duh)
exercising increases your caloric needs, though, and if you're at a deficit, which you typically need to be to lose weight, it will just make you more tired.
That said, if you're not concerned about your weight, and just getting healthier, exercise is good. But significant weight loss typically happens by running a large caloric deficit, which isn't really a safe thing to do with meaningful exercise, as it impedes the recovery of your muscles.

I'm significantly overweight but not landwhale tier as I'm able to hike/run/do manual labor all with ease etc but I'd still like to lose like 60 pounds and put me down to like 200 (my body and frame would never permit me below 180 tbqh) (I think 260lbs is like 125kg or something and 200 is like 90 or 100)

Yeah, 60 pounds is a significant amount of weight.
Like I said, the weight loss from exercise isn't meaningful, but that doesn't mean there can't be any. Me being a random person on the internet and admittedly not any sort of medical professional, I'm still gonna say to lose that much weight you're straight up going to have to diet.

That's why I don't like a lot of these meme diets either. Figuring out roughly how much food you should be taking in as an adult seems like a skill you need to get a handle on.
That said, sometimes I have a few too many meals in a month and I cut back a little when I notice my belly starting to get a bit flabby.
walking around the block isn't really significant exercise. Is it possible you were eating less and not really noticing?
A lot of people who are extremely overweight have the opposite problem: they think they're eating much less than they actually are.
