While running my own unbound dns resolver would be safer but it would be less responsive when it only caches request and misses will have to be requested from the nearest root name server, that's how it works right?

It's super fast in Australia (which is where APNIC is based). Honestly, it's pretty decent.

Best part is I'm running it as DNS over TLS. It also supports DNSSEC which works just fine. All in all, a lot to like about it.
