16:10 is just written that way to make it easier to compare to 16:9, the most common aspect ratio.
21:9 is actually 64:27, it's a simplification (off by about 1.5%) to make it easier to compare to 16:9. If you want to be autistic then insist on 64:27, not 7:3.
If 4:3 content was a new thing, it would be probably be written as 12:9 or 16:12.
