You might want to look into upgrading that RetroPie, RetroArch's new version supposedly improves built-in latency by quite a bit.
I can't tell if you're using night shift but pls save your eyes, bright screen + no light in background is a recipe for eyesight degradation.
I really really want some RGB strips, even just a neutral white set. The effect they have is amazing.

When I play knights of the old republic I keep level/character charts on my left monitor and item charts on my right monitor and the game running windowed on my center monitor but I'm sure many people just play it full screen on one monitor.
