Because most AIs work by looking at a large dataset and making assumptions based on that and whatever convolutions they decide to work on. But at the root cause is the initial dataset they use, and if that dataset says women=daycare workers, its going to say anyone who's a women should be a daycare worker, even if they have 3 phds and have been working in research for 30 years.

It depends on how it's designed and trained.
