If they know x and y about you, then they can also tell z. Things as innocuous as shopping preferences, age, and gender can tell those with massive learning farms incredibly personal details about beliefs, habits, and so on. It's fair to say that at this point, Google knows more about many people than they know of themselves.
Now maybe you don't give a shit. Maybe you don't understand that if someone can predict your actions, they can manipulate those, as easy as pulling a string. Maybe you don't see anything wrong with living in a sterile 'utopian' hellhole devoid of mental liberty.
But there's a far more down to earth example of why all this large scale behavioral/belief data gathering/learning is such a threat: jury selection.

oh u. one out of many cases where it failed me, was when i was looking for a date of a particular mini-festival, typing in the name of one of the bands playing and the name of the festival. i was given everything but the information i was actually looking for. about 70% of the results on the first page had nothing to do with the festival or the band, but were instead unrelated articles where the same words were used. meanwhile, the same search string in Google gave me exactly what I needed in the top results.

another example was me doing an image search with band name and album name (which is also known for its iconic cover art) as keywords. this query could only possibly refer to two things:
1. the musical album itself, the title track, the footage of either being performed
2. the album cover art in form of print, drawing, merchandise, etc

once again, SearX simply put the three words together and the results were mostly irrelevant. Google, on the other hand, knew that by typing in this query I couldn't possibly be looking for anything that's not related to the band, their music, or their artwork, and naturally the Google image search was filled with nothing but that.

i may be spoiled, but i'm not willing to not use the one search engine which actually works because of "muh botnet" just so i can waste my time wrestling another, just to eventually go back to Google.

YouTube? if the answer is yes to any of the above, then they have a profile on you. the more sources they have, the more valuable the information, as it helps in establishing behavioural patterns where you may not expect them.

short answer is, the result of data collection goes far beyond what you can see - ads. the real purposes of data mining are far more intricate, including behavioural prediction & conditioning.
