Because flat, clean UIs like that are easy to render (good for low-end devices), easy to style (easy to customize frameworks), simple to create (smaller asset footprint) and easy to use as a consumer.
Material design is objectively the best, though I'm not excited for the new version with the rounded edges and what have you.
