Officially, it's to save battery life.
For Applel, it appearantly makes a lot more sense to cut performance in half after one year than to just increase the battery size, or make it user replaceable.
Of course, the fact that performance drops like a rock on old models doesn't hurt when it becomes time to release a newer and faster phone.
