Just realised, OP is referring to Terry Davis. (I think.) Creator of temple OS. Really incredible guy. I doubt he'd use Ubuntu after creating his own OS, although Temple OS lacks networking features so who knows.

I recently set up a headless using Ubuntu Minimal. Total OS was about 500Mb on disk. Not too bad actually.
