Just because someone is publicly sharing their source code doesn't imply that you are allowed to just copy it for your business. Sure no one cares if you just copy it for your local neet-tier project but a company cannot do that if they don't want to get sued. That's what licenses are for.

If you are a company and implement the same thing in a short amount of time, so you get sued for stealing code there are multiple things that can prove it. First of all there are employees who know that it's stolen and that probably won't lie in court since they don't want to go to jail. Also there is the possibility that if there's enough evidence the court rules that a third party should take a look at your code. Trust me stealing code isn't something a real company can get away with.
