To switch away from "esoteric" stuff like C they'd have to include it in their curriculum first.
You won't find C outside of microcontroller programming, and that's where everything besides C would be esoteric.

JavaScript is the second language in widespread use with most idiosyncrasies right after C++. Teaching it to beginners is a bad idea, it would just confuse them. Teach them Python, it's more intuitive and more consistent.

Or F88-F90 since it's trivial.
Or Lisp for pretty much the same reason but with more concepts.

If your studies do not cover all canonical theory of your field in sufficient depth, it does not belong on a university period.

C is a good language to learn because it let's you get close to the hardware. You can also learn how things work underneath the hood of many different programs/programming languages that are written in C/C++.
