This might come as a surprise to you, but Linux works just fine with UEFI.

I'm using an EFI stub kernel on this Gentoo PC. Didn't see a need for Grub.

They don't either. You can easily generate your own signing key, sign your kernel with it, and add the key to your UEFI. Then you have fully functioning secure boot on Linux, even if you built your own kernel.

The same issue would arise with Windows. Apple uses custom touchpads with their own communication protocol instead of using synaptics like everyone else; they control it both on a hardware and software level, and their software is made specifically for that touchpad. There's no point in implementing an entire new way of mouse input just for a couple of laptops that aren't as common as people think; just make a basic driver that plugs into the existing interface.
