Self-hosted email works just fine, asshat. At least if you follow the digitalocean guide, anyway. Got myself SSL-encrypted IMAP. On my own domain. Since I'm hosting it on hardware I own and have physical access to myself only I can read my own email.
However, many VPSservices simply won't give a fuck even if they do have physical access, since you'll be a VM somewhere and chances are not even they know where your data is actually located.

I use my own domain with zoho.

sure, a client can send and receive encrypted streams with emails from imap or pop servers, but unless your using smtps, your emails are still being read by people other than you
