Actually since it's a flexible material, it would be much harder to crack the screen in that thing than any phone with a glass screen, if not outright impossible even.
Guaranteed it's prone to scratching easily though since it's bound to be a soft type of plastic/film material, but that's what screen protectors are for.

And the biggest issue is how are your mobile apps going to adapt to such a screen. Will they need a special API, will they work with normal mobile apps, etc?

I doubt it. The fucking Wii U does this and the second screen is even wireless. The 3DS and DS did it ages ago. It's trivial technology.
The stumble is android apps in general are not designed with this form factor, they will look like shit. You can make custom apps for it, but who else is going to do that?

Yeah, but, it was Microsoft who first tried to launch such a device and failed (revived Courier project -> Andromeda). And maybe they realised it will look like shit with their store apps.
Samsung also has been playing around with foldable screens for some time and recently they got more serious about it. I'm sure they will make their own custom UI for it, on top of Android. Not sure about the apps tho.

Go ahead and try cracking a sheet of film and see how it goes. You'll quickly learn that it doesn't behave like glass at all.
And no, simply cutting or puncturing it with a knife isn't the same as cracking it.
The less rigid a material is, the harder it is to crack it. But it's trading off scratch resistance in favour of impact resistance.
we MIGHT get roll-up phones that roll up to the size of a battery or ball pen and include some kind of stabilizing rails, but any folding phone is either going to waste space by not folding flat, or it's going to fold flat and develop a crease. There is no material that doesn't wear out from bending, and there won't be.

I don't think that's a fixable problem unless they can make it stretch. In order for it to wrap around when it is folded, it will have excess material when unfolded.

They'd have to use a material for the screen that doesn't have a 'memory'. Very doable

If you want larger screen sizes on a phone, it's probably the only feasible way. The hinge won't have to expand far, like 2 - 3 millimetres just to get rid of the bump. possibly even make it out of stainless steel. doesn't have to be made out of plastic.
Added cost, but this would be on a premium phone.
