Recently bought a chinkphone, and athough I'm very happy with the specs, it has a ton of irremovable bloatware and gapps that can't be disabled.
Is LineageOS the best solution in terms of freedom and customisation? I just don't know where to look for decent custom Android OSs.

Lineage is probably your best bet, though we can't know for sure without knowing what phone you have. Lineage is available on the widest range of devices.
