let me assure you though, the pain of having to back up will be less the pain of running x32 with 4gb of ram

I read about a lot of instability in the x32 system with 4GB memory. I will opt for x64, with 4gb or maybe 6gb

What's the benefit of using a server version instead of the regular one? I remember trying using 2008 but drivers weren't compatible and didn't try anymore.

It has Hyper-V unlike Windows 7 if memory serves correctly. Other than that, I wouldn't bother running Windows Server on a desktop. Certain software will refuse to run on a server OS because companies want you to shell out more $$$ for a server/enterprise version.
