first off, be aware of all the data you give and have given to various sources
take a piece of paper and start jotting down the major ones

your phone and the software on it matter less than being aware of what you put there. you can always leave a phone home or take the battery out (if applicable)

you should probably use an android phone with a custom ROM + degoogle it + don't install any non-free, non-trustworthy applications aside from the absolute necessities to get the phone to work. dumbphones probably work too, but aren't probably any better, some may be equal, others slightly worse.

at home, run some proper GNU/Linux distribution, and again, don't use services that particularly spy on you. use tor and VPN:s to further mix up your connections

the main thing, though, is, just don't give out information or use social media and popular search engines. this will drastically decrease the information anyone can have on you.

You have to make a tradeoff. How much effort and inconvenience are you willing to stomach to minimise your footprint in the botnet? Most urban centres have facial recognition, are you willing to avoid these entirely? Probably not. On the other hand, building your own private server so you don't have to store your shit on Google Drive is achievable.

Don't use the internet at all and don't use devices that can connect to any kind of network. That's the only way.

It's the multi-dimensional combination of millions of data points over the course of years.
