For the biggest ones I could find that I could run at my home on my old desktop (that used to be a altcoin miner) were windows server and Ubuntu server.
Which would you recommend to me for creating a home made server for a website if I were to make one?

Install openbsd and use httpd (built-in to openbsd) for simplicity and security. If just use (bloated) nginix for the Linux route.

I use Debian, which is Ubuntu without the bloat and Apache 2. Simple, lightweight, and fast.

If I'm not mistaken the marketshare of Windows OS has been declining

Well, it is technically Turing Complete. So I guess is a valid option.

Nginx
They even have recipes for several frameworks and CMS (like Wordpress) that you can just copy and paste to config it properly.

Amahi home server "just works". Has Samba and httpd baked in. Based on Fedora but you don't have to get your hands dirty.
