Some programs want to be users as well, so you should not let em.
Chrome for example, chrome want to have more processes opened by him than everything else on your machine.
Chrome wants all your memory, all your CPU time, all your process list.
Give chrome super user powers and it will use it to get even more processes.

sudo means I have root privs to do what I want, while making sure none of my software gets root privs unless I specifically give it to them. Case in point: I know what I'm doing most of the time, I don't know what random application #34 is doing beyond what it's telling me it's doing.
