What's nice is those are modules you have to download. So base system is less bloated then your regular consumer stuff

You still have the choice to choose individual updates or disabling updates entirely.

Pretty sure you can disable updates to win 10 if you want. Just can't select which to install or not install.

I've been using ltsb 2016 since it was a thing and it just works, mainline 10 is fucking unusable.

Pros:

Some management utilities for server specific tasks

Well, in my case with LTSB whenever I turned on my 55" tv and tried to use it as my second monitor my first monitor would shut off and close all fucking windows running on my pc and then I turn black. I would see the blank desktop on my tv but no primary monitor. There was no way to see off my first monitor unless I disconnected the cable after that. Fucking weird. I tried different settings and shit and just said fuck it.

After I went back to 10 never had this problem again. Never had it before also in 10. I been using that TV to watch movies the entire time I had it.

8.1 is good, install classic shell and enjoy win7 with a driver store and updates til 2023.

You can use windows servers as a normal desktop, many servers are off by default and meant to be manually enabled so you shouldn't notice too many issues.

Let's you review updates and mark them as don't install.
